Virgin Strawberry Daiquiri
I had a group of my lady friends over for morning tea in the Cookie House this week as I am about to become incommunicado until Christmas with double uni and work going crackers. It was a lovely morning, I made the Caramel Pecan Cake and some petit fours and some dark chocolate cookie truffles and some meringue nests with coconut cream and berry fruits and some seed crackers with avocado and ocean trout and prosciutto wrapped melon. To go with it I served the Virgin Mimosa we have already spoken about and this gorgeous Virgin Strawberry Daiquiri, both were enjoyed immensely but a few of the ladies asked for the recipe for this one, so here it is.
1 teaspoon vanilla essence
5 medium to large strawberries
2 teaspoons lime cordial
2 tablespoons coconut cream
350ml apple juice, I used a cold pressed pink lady juice because I like the woodiness
2 teaspoons icing sugar
12 ice cubes
Pour the whole lot into a blender, blend until very smooth, pour into glasses, garnish with mint or lemon balm.
I could drink a bucket of this.
