Because we were having a chat yesterday about the round meal and how it does not have to be a great big involved undertaking - for those of you who are new to the Cookie House, the Round Meal is what we call a meal that hits all our macronutrient boxes and a good proportion of our micronutrient boxes - I want to show you my breakfast.
Mmmm. Looks good, doesn’t it? Tasted very good too.
So here we have buckwheat porridge, which is the polar opposite to quick oats in that it takes at least twenty minutes of simmering to cook, you could use oats instead if you can eat them, I can’t, so I don’t. What else is here? We have a spoonful of raw honey from Crispin’s Bees who visit my garden, some pecans, a banana, almond milk and some dried blueberries.
Right then, let’s take a step back now. We have some wonderful beneficial fats in our pecans and our nut milk (my own nut milk, go see the post in Dairy Free if you want to have a go at making it yourself, do be warned though, you will never go back), some excellent unrefined carbohydrates in our buckwheat, dried blueberries and banana, plenty of protein in our buckwheat and nuts, and some really good micronutrients too, antioxidants in our blueberries (the skins of which contain resveratrol, the same phytonutrients that people tell themselves red wine is a good source of) and our raw honey, plenty of potassium, magnesium, vitamin C, manganese and copper in our banana, vitamins A, E and some B vitamins in our pecans, as well as a good helping of potassium, calcium, zinc, phosphorus and magnesium. Our buckwheat is also a powerhouse of minerals, with good amounts of potassium, phosphorous, magnesium and calcium, as well as plenty of fibre, which helps keep our gut happy. Because the almond milk in this breakfast is my own, I am also getting a bit of nutrition from the cashews, linseeds and sunflower seeds, which add a little vitamin B6, some magnesium, some iron and some more calcium.
I could go on and on, but all I really want to say is, here, again, is a really simple and inexpensive round meal, if I have three meals a day, I have ticked all of the boxes in the first one with this simple, wholesome meal. If we each of us eat mindfully and ensure that at least one of our daily meals is a round meal, be it fancy or simple, we are on the road to better nutrition.
