Here is the next part of the complement of recipes I used to make my Mexican Vegan extravaganza, the Chilli Con Beane, a simple and delicious raita.
A raita is a yogurt sauce, quite similar to tzatziki, you can call it that if you want, to me it is raita. It adds acidity and freshness to heavy dishes, a counterpoint in both flavour and nutrition, and if we are (as we all should be) looking to add more veg to our diet, little side accompaniments like this and the gorgeous simple salsa which was served with it (see the post next door) are an excellent place to start.
Ingredients
1 small Lebanese cucumber, grated and the juice squeezed out
2 fat cloves garlic, finely chopped
zest of one lemon
100g unsweetened natural coconut yogurt (or yogurt of your choice, just make sure it has no sweetener in it, because so many of them do, and we want quite a sour yogurt for this)
pinch salt
1 tablespoon dried chives
Mix together.
And serve. Easy peasy.
