Pepitas

I was just asked what pepitas are, I am so sorry, I always think that people know the things that I know, so if I ever mention an ingredient or method that you don’t know just send me a message via that little chat icon thing and I will try to explain it better.

Pepitas are the dark green inner kernel of the pumpkin seed. They are delicious and nutritious and I use them in so many things.

Here I am toasting them as a crunchy topper with linseeds and sesame seeds. Pepitas are high in fibre, a good source of protein and beneficial fats, rich in nitrogen, calcium, magnesium, phosphorus, potassium, zinc and selenium. Pepitas are a natural source of folate, beta carotene and vitamin E. So they are a worthy and beneficial addition to our diet.
