I was thinking about food (ha! I am always thinking about food), and the diet and humans, and I suppose, the human diet. And I was thinking about the Food Guidelines and what used to be called the food pyramid, and is now the food plate. And I was thinking about food intolerances and how, no matter how hard we try, we cannot cater to everybody, but how that should not stop us from trying, you know?
The recipe I made today, the mousse and the parfait. Both are dairy free, gluten free, grain free, vegan, and yet....and yet.... could my Mum or my friend Kathy (both sensitive to Sulfites) eat them? They have medjool dates in them. Now I checked the packaging and no Sulfites were listed, but does that mean that they are Sulfite free? I don’t know. I guess I could test by feeding some of the mousse to Mum or Kathy, but that seems a bit mean.
My mission statement here at the Cookie House is that I want to teach the world to cook in perfect harmony, (I am singing again, that old song, I want to teach the world to sing in perfect harmony), and I think that the very first thing to remember in that case is that we are all different, each of us is unique and beautiful, so I will continue to try to bring you unique and beautiful food.
