So sometimes we do not feel like cooking. But if you are like me, your eating out options are pretty narrow. The other night I made a corned beef with mashed potato and lots of yummy sauce, and on purpose I made a double batch of everything. This is what I did with the leftovers.
Looks yummy, doesn’t it? And it was, and gluten free, dairy free, nut free, take away free....
This is what I did. I had a rummage in the fridge and found a carrot and some tomatoes, but really, any handy veg would have done, and cut that up into smallish chunks, then I cut up all of the leftover corned beef into bits small enough to fit in my mouth, then I mixed the meat and veg into the leftover sauce.
I popped that mix into the bottom of my trusty range of ramekins, loosened up the potato with a little water and spread that on top.
Then I popped a little plastic shower cap on each (I have some great re-useable ones I bought from Aldi) and tucked those into the freezer. Now, on a night when I don’t want to cook I just trundle to the freezer, take one out, take off its shower cap and pop it into the oven, slow at first, ten minutes at 100 degrees C so you don’t shock the ramekin into breaking, then turn the heat up and cook until golden.
Mmmmmm! Leftovers perfection.
