Dairy free Caramel Sauce

I have been slack this week and not put up any new recipes for you, but don’t despair, I have not forgotten, I have three gorgeous newbies to go in, I just have to write them down.

It has been a busy week, we have had quite a few orders in the Cookie House and my first uni assignment was due, it’s okay, breathe out, I got it all done, but it is definitely time to treat myself to something a little bit sweet and delicious. May I introduce you to my Dairy Free Caramel Sauce?

Caramel sauce is an interesting one, so often full of butter and cream, now I am in no way suggesting that this is a healthier option, but it is absolutely delicious and it will not get those of us who are dairy intolerant wheezing/aching/creaking or scratching.

Lovely, aren’t they? All portioned up ready to go into the freezer, this is the caramel sauce we sell with our gluten/dairy/nut free Sticky Date Puddings through Convalita Gourmet. One of our lady cafe owners puts the empty tubs back into her freezer after she empties them and then scrapes the leftovers out for herself with a spoon. She also gets very cross with her husband when he nicks them to pour over his ice cream. That makes me laugh, but this is a very, very moorish sauce, don’t say I didn’t warn you.



Dairy Free Caramel Sauce

40g mild olive oil

50g white sugar

75g brown sugar

150ml golden syrup

3/4 can coconut cream


Tip all of these things into a small pot, it will look gross, like it has already been down in your stomach once and come back up, like this -

Don‘t be afraid, put the heat on low, stir it from time to time and ignore it, it will get better, soon it will look like this-


By now all the sugar crystals should have melted and you impatient Cookie House people may be tempted to turn up the heat...is it ready yet for a bit more heat? No.


I hear you saying, how about now? No. Wait.


Okay, now you can turn the heat up without splitting it, bring it gently to the boil and then turn it off and let it cool, give it a stir from time to time and you will end up with a jug of gorgeous Dairy Free Caramel Sauce like this -
