Do you ever get to the end of the week and go to make dinner and say, crap, is that all we have in the house? I had that today so I threw together this little soup and it was a complete hit with all the Thomas’ so I thought I would pop the recipe here for you.
This soup made me laugh actually, it reminded me of that old story about the man who made soup from a stone, it was a bit like that.
Ingredients
Served 4
1 tablespoon olive oil
1 brown onion
Chicken stock
6 cloves garlic
6 potatoes peeled and quartered
100g raw cashews
1 x 125g tin four bean mix, drained and rinsed
salt and pepper to taste
Pop the cashews in a bowl, cover with boiling water, set aside until the soup is ready to blend.
Heat the olive oil in a medium sized pot, saute the onion and garlic until translucent, add the potatoes and one litre of chicken stock and the rinsed beans. Bring to the boil, reduce to simmer, simmer until tender.
Puree the cashews in their water in a high powered blender or food processor until smooth and creamy, I used my NutriBullet for this as it gives a very smooth cream. Add to the soup, purée with a wand or stick blender until smooth. Season to taste, thin out with a little water if necessary (I needed to, it was very thick), serve and enjoy.
In the picture it has been served with my Experimental Quinoa Bread, which is under construction at the moment, and showing very good signs of being an excellent toasting loaf. I will let you know when I have it perfect.
