Coconut crepes - gluten, grain, dairy, soy free

So today it is my birthday and I am 50, which is just amazing to me. My lovely daughter Emma made me a beautiful birthday breakfast which she has been kind enough to give me the recipe for to share with you.



Ingredients - Made six


4 eggs

1/2 cup almond milk

1 tablespoon olive oil

4 tablespoons coconut flour

1 tablespoon tapioca starch


Combine the eggs, almond milk and olive oil, then combine the flours and whisk into the egg mix until smooth. Emma at this point makes hers in a sandwich press, which is amazing to me and works very well, but you could also make them in a well oiled frying pan. Cook until golden on one side, flip, cook on the other side and then serve with lemon and sugar. Delicious! Thank you Emma.
