I love salsa, so fresh, and a good way to sneak more veggies into a meal. They are so simple that I wonder that anybody buys them, but there they are at the supermarket, so somebody must be. This is a real two minute salsa, great for corn chips or crudités or as a companion piece for the Corn Tornados just posted next door.
Ingredients
1/2 avocado, split and mashed
1/4 bunch fresh coriander, chopped
2 Roma tomatoes, finely diced
1/4 green capsicum, finely diced
1/8 red onion, finely diced
Juice of half a lemon or lime
1 tablespoon chilli sauce (I used the one we made last week, see Chilli Sauce post)
Combine all ingredients in a bowl, give them a good mix and the salsa sit in the fridge for about twenty minutes so that they flavours can get to know each other. That’s it. It is that simple. Enjoy.
