Asian noodle salad

So you know how I promised you we were going to make all that poached chicken that was a byproduct of our consomme into some gorgeous dinners? Well, last night’s noodle soup was the first and this Asian noodle salad, one of my most favourite summer dishes, is the second.

Ingredients

Makes two big mains or four small side dishes

150g mung bean noodles or noodles of your choice

100g poached chicken

1/2 a carrot cut into batons

6 snow peas cut in half

a handful of bean sprouts

1/4 red onion, sliced

1/2 red capsicum, sliced

1 stick celery, sliced

About 1/2 cup sliced red cabbage

1/2 Lebanese cucumber, cut into batons

1 tablespoon shredded fresh basil

1/2 bunch torn fresh coriander

1 handful baby spinach, shredded

2 spring onions, sliced

2 cloves garlic, chopped

2 teaspoons soy sauce

1 teaspoon kecap manis (sweet soy)

1 teaspoon extra virgin olive oil


Okay, that is a lot of ingredients, but most of it is salad veg, if you don’t have some of it just make a big bowlful of what you do have, like this


Let’s pause just for a moment here. One of the ways to make sure you are getting all the vitamins you need from your diet is to include a wide variety of different coloured fruit and veg, just look at the colours here, you can feel that doing you good just standing next to it, can’t you? Though really, standing next to it is not enough, we have to get it into the body for it to do us any good.

So, we have our vast bowl of multicoloured veg. Now cook the noodles as per the instructions on the side of the packet, this is really important, every noodle seems to have different preparation instructions, and quite often the instructions can change depending on what you are going to use them for, so read the packet, cook your noodles, drain and refresh with a bit of cold water to cool and then stir your olive oil through them, this will stop them hogging all of the sauce as soon as it hits the bowl.

Mix together the soy sauces and the chopped garlic, tip that over the salad veg, add the noodles and the chicken and mix it all around until thoroughly combined, serve and enjoy.
