I made the most exquisite Mexican feast for my family last night, and this little salsa was a part of it, but really, it is such a gorgeous thing that it will lift any savoury meal that it is added to.
As you can see, the coriander is on the side as Mr T will not have a bar of the stuff, but the rest of us love it, and how cute are these little pots? The green one was made by Cookie House tadpole Emma in her pottery class, and the other found on a op shop scrounge with same CHT.
12 cherry tomatoes, quartered
1 avocado, peeled, seeded, diced
1/3 small red onion, finely diced
1 tablespoon fresh lemon juice
pinch of salt
chopped fresh basil and parsley
Pop all of those ingredients into a small bowl, mix thoroughly, and you are done, how easy was that? Why on earth does anybody buy it pre-made???
